Honey-Mustard Baste for Lamb

| 1/3 c. olive oil |
| 1 clove garlic, finely-chopped |
| 1 Tbsp. whole grain mustard |
| 2 tsp. honey |
| 1 Tbsp. fresh herbs of your choice, roughly chopped |
| 2 tsp. red wine |
Directions:
1. Combine all ingredients and brush over meat immediately before and during cooking. Be careful the honey does not cause excessive charring. Cook to desired doneness and rest well before serving.
Tip: Char-grilled red meat can be served in the traditional manner, with salad and/or barbecued vegetables, adding a compounded butter or sauce if desired. Or you can cut the meat into chunks or slices and serve as a maincourse salad, wrap, or pasta dish. Skewered presentations can also be attractive, and often lend themselves to serving with rice or couscous accompaniments.
